Lasagna Roll-ups from leftover meat sauce
These were super easy and fun to make. It would be great to do with your kiddos. Unfortunately, mine is only 13 months old and could not serve as my Sous chef but was a very good taste tester.
What you need:
-Lasagna noodles
-Shredded parmesan
-Ricotta Cheese
-Leftover Spaghetti Sauce
-Cupcake baking pans
Cook your lasagna noodles. Simply follow the instructions on the box. Once noodles are finished, lay noodles flat (I used a cutting board) and begin layering all ingredients. I placed my ricotta down first, then shredded parm and then my leftover meat sauce. (Judging by the photo it looks as though I only chose to put my sauce half way, but I did not. It was all the way across). I chose to use the ingredients listed above because that is what I had on hand. You could easily substitute the cheeses or add in veggies. Spinach and mushrooms are amongst my favorites.
I prepared three at a time because that is all that would fit on my prep space. Once my ingredients were all layered, I began to roll them up. This part was a little messy, but there was no way around it. I then placed them upright into my cupcake pan.
I then baked them on 350 just until my cheese I placed on top was melted and a little brown approximately 15-20 minutes. Everything is pre-cooked so you just want the cheese to melt and flavors to blend. Tada! You now have Lasagna Roll-ups. This could have been done in a cake pan as well by laying them flat. I wish I had put more cheese on top of mine.
